Macaroni Salad Recipe

Macaroni salad is the perfect and easiest side dish. It goes perfectly with jerk chicken, which is why I decided to post the two together. The cold, creaminess with the hint of sweet is perfect to tone down the pepper of the jerk chicken.

Macaroni salad is side dish of the year because it goes so well with so many main bitches, I mean dishes. I chose to make this one a little on the sweeter side because I was pairing it with jerk but feel free to tweak according to your preference.

INGREDIENTS

  • 1 pack elbow macaroni
  • water for boiling
  • 1 tsp vegetable oil
  • 2 tsp salt, for boiling
  • 2 stalks celery
  • 1 small onion, diced
  • 3 sprigs of parsley, minced
  • 1/2 pimento pepper, minced
  • 1/2 carrot, grated
  • 1 cup mayonnaise
  • 2 1/2 Tbsp mustard
  • 2 tsp blackpepper
  • 1 tsp crushed red chili flakes
  • 2 1/2 Tbsp brown sugar
  • 2 tsp apple cider vinegar

METHOD

  1. Boil macaroni in salted water, with oil until soft
  2. Strain macaroni
  3. Add carrots, onions, parsley, pimento and celery



  4. Add mayo and mustard to mixture

  5. Add brown sugar and apple cider vinegar, followed by black pepper, red chili flakes


  6. Stir well
  7. Refrigerate before serving
