Christmas Cookin’: Coconut Sweet Bread

Christmas is coming! Can you smell it in the air? Feel it when the parang starts hitting the radio? There’s a feeling about this time of year that you can’t describe. The lights from Christmas trees, the smell of home made baking and the general togetherness that everyone feels. Magical.

I’ve decided to focus on Christmas recipes and all things Christmas for the next couple posts! We’d have a new series called “Christmas Cookin'”. Excited? Me too! I’m going to share fun recipes and cool Christmas ideas in the next few days to come. I’m going to do a variety of local Christmas foods so sharpen your palettes!

We’d begin this segment with Coconut Sweet Bread. Anything sweet and spiced makes me think, yep, it’s Christmas. Sweet bread is a local favorite and so simple to make. The nutmeg, dried fruit, coconut and sweetness of this bread makes me think of festivity.

Toasted with some butter and even a slice of cheese, you’d have a little plate of deliciousness. Let’s get creating!

INGREDIENTS

  • 3 cups all-purpose flour
  • 1 small dried coconut
  • 1/2 cup unsalted butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup Tutti Fruitti (mixed fruit in corn syrup)
  • dried mango, paw-paw, pineapple – alternate until you get 1/2 cup
  • 1/2 cup raisins
  • 1/4 cup mixed peel
  • 3 tsp baking powder
  • 2 tsp Angostura bitters
  • 1 tsp mixed essence
  • 1 tsp coconut essence
  • 1 large egg
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 cup coconut milk (remains after blending coconut)

METHOD

  1. In a blender, add coconut and 1 cup of water


  2. Blend coconut until fine
  3. Strain the coconut from the water, reserving the water for later use


  4. Mix the sugars and egg together


  5. Add the grated coconut and mix well

  6. Cube butter and add into mixture, incorporating well
  7. Add bitters, mixed essence and coconut essence



  8. Sift flour, baking powder, cinnamon and nutmeg

  9. Add the coconut milk to the wet ingredients

  10. Add the wet ingredients to the dry ingredients
  11. Add the fruits and mix well

  12. Line a baking dish with wax paper, this recipe comfortably makes 2 loafs, a small and medium
  13. Pour batter into prepared pans

  14. Bake in a preheated oven at 350°F for 1 hour or until a knife inserted in center is clean on removal
  15. Both my dad and granddad are diabetic so I was trying to ease on the sugar but the last step is mixing a little melted unsalted butter (1/4 cup) with about 1/4 cup of brown sugar and making a glaze for the bread. Paste the glaze onto bread and leave in oven for 5-10 minutes.
